Chilled Crust-Free Lemon Cheesecake
Ingredients
- 1 1/2 c. boiling water
- 1 tsp grated lemon zest
- 1 pkg (3 oz.) lemon flavored gelatin
- 2 c. frozen whipped topping, thawed
- 1 pkg (8 oz.) cream cheese
- 1/3 c. frozen lemonade concentrate – thawed and softened
Directions
Combine boiling water and lemon gellatin in a small bowl. Stir until gellatin is disssolved. In a separate bowl mix cheese, lemonade concentrate and lemon zest thoroughly. Mix in gellatin. Chill until thickened, but not set. Lightly oil a 6 c. muffin pan. Fold whipped topping into thickened gelatin mixture. Form mixture into muffin pan cups. Chill until firm. Remove from mold. Garnish with berries.
