Gluten Free Homemade Yellow Cake Mix
Ingredients:
- 1 C tapioca flour
- 1 1/4 C. white rice flour
- 1 tsp xantham gum
- 1 1/3 C white granulated sugar
- 3/4 C mayonnaise
- 4 beaten eggs
- 1 C milk at room temperature
- 1 3/4 tsp gluten free vanilla extract
- 1 tsp iodized salt
- 1 tsp baking soda
- 3 tsp baking powder
Directions:
Oven needs to be set at 350 degrees prior to baking. Coat two 8 to 9 inch round baking pans with any brand butter flavored cooking spray
Flour the pans In a large mixing bowl mix dry ingredients together, except sugar and set aside.
In a medium size mixing bowl, mix sugar, eggs, and mayonnaise until fluffy.
Add the moisture mixture into the dry ingredients mixture. Add the milk and gluten free vanilla into that mixture, mix very well. Spread the mixture evenly into the greased and floured baking pans. Bake for 25 minutes in the preheated oven. To determine when the cakes are fully cooked: (1) they will spring back when lightly touched or (2) if a toothpick comes out clean when it has been inserted in the middle of the cake.
Place on cooling rack and let thoroughly cool Optional: frost cooled cake with the below gluten free buttercream recipe.
